You will need:

  1. 1 cup of overripe mashed banana (approx. 2-3 bananas)
  2. 1 ¼ cup of your milk of choice
  3. ¼ tbsp of your choice of syrup sweetener (maple, agave, honey, etc.)

How to bake

  1. Preheat oven to 170°C and grease a 12-hole muffin tray.
  2. Empty packet mix into a large bowl and add mashed bananas, milk and maple syrup, mix well.
  3. Let batter stand for 5 minutes.
  4. Divide batter evenly between muffin tray and bake for approximately 25 minutes.
  5. Muffins are cooked when a skewer inserted into the middle of the muffin comes out clean.
  6. Store in an airtight container in the fridge for 4 days or freeze.
